Black Bean Soup

Makes: 4 servings

Ingredients:
- 10 ounces dried black beans, washed and soaked overnight
- 6 cups water
- 1 medium onion, chopped
- 3 cloves of garlic
- 2 tomatoes, peeled
- 2 tablespoons garlic, minced
- 1 1/2 teaspoons ground cumin
- 1 tablespoon olive oil
- 1/2 cup non/lowfat yogurt or sour cream

Directions:

Drain the beans and combine with the water and half the onion in a 4-quart
